It is appropriate that Glenn chose to illustrate our new Cubano sandwich with a schematic. A lot of research and trial and error went into the creation of this new addition to our regular sandwich menu. Field trips to legendary cubano makers, various versions of the lime mayo, countless attempts to get the ratio of pulled pork to swiss to pickle to avocado to ham right. And the final, inspired decision to use Balthazar focaccia to contain it all. Our Cubano takes time to grill on the panini press but is worth the wait.
